This flour tastes amazing and is perfect in baked goods. I highly recommend it!

The only problem I have is with the measurements. I typically measure by weight rather than by volume, but I am having a problem with this flour. The package states that two tablespoons is 28g. However, 28 grams measures closer to four tablespoons, even when tightly packed. I like the flavor of this flour. I do not however really know how to use it. It doesn't behave like I thought it would. I feel like I need a chemistry of baking class to understand it's properties. I do recognize that it cannot be a one to one substitution for wheat flour. The bread will fall apart. It does require additional liquid than regular flour to make a dough.
